
Why Your Bread Is Coming Out Dry (and How to Fix It)
Ever pull a tray of bread out of the oven only to find it’s dry as a bone? It’s frustrating. Usually, it comes down to how the heat is hitting the dough. Standard convection air tends to suck the moisture right out of the surface before the middle even has a chance to get hot. If your quartz tubes are worn out, swapping them for the right infrared (IR) heaters changes the whole game.
The Secret to a Better Crust
Here is the thing about IR energy: it doesn’t rely on hot air. It goes straight to the surface of the bread. We build our tubes to hit a very specific wavelength. The goal is to get those water molecules moving without evaporating them instantly. This lets the crust set fast, which basically locks all that goodness inside the crumb. Check your current tubes. Are they cloudy? Pitted? If they look worn, they aren’t emitting heat efficiently. You’ll find yourself cranking up the thermostat to compensate, and that’s exactly how you end up with a scorched, dry exterior.
Getting the Specs Right
We use high-purity fused quartz because it lets the IR radiation pass through without any interference. We also make sure the filament is centered perfectly. If it’s off, you get “hot spots” that warp the tube or burn it out way too soon. But be careful with the power. You’ve got to match the wattage and voltage to your oven’s transformer. If you get this wrong, you’ll either have a weak heater or a blown filament within a few hours. These are designed to be drop-in replacements. Just double-check the footprint and the connectors. You want a tight fit. Loose connections cause arcing, and nobody wants to deal with melted sockets.
A Few Things to Watch Out For
One warning: quartz is fragile. Seriously. One clumsy bump during installation can cause a tiny hairline crack. Once that happens, the vacuum is gone, the filament oxidizes, and the tube is toast. Handle them with care. And while IR heaters heat up fast, they are intense. You need to make sure your airflow is balanced. If the heat is too concentrated for the amount of bread you’re baking, you’ll end up with a burnt top and a raw bottom. Just balance your tube placement, and you’ll be golden.
