
Keeping the Heat Steady in Deck Ovens
If you’ve ever worked with a deck oven, you know the struggle. You slide a cold tray of dough onto the stone, and boom—the temperature tanks. It happens every single time. If you don’t fix that drop immediately, your crust is going to suffer. That’s why we use 500W infrared lamps paired with active compensation loops. Why 500W IR lamps? Think of it this way: convection heating just warms up the air. But IR waves? They hit the dough directly. We went with 500W because it’s the sweet spot. It’s got enough punch to bring the surface temperature back up fast, but it won’t torch the top of your bread before the inside is actually done. It fits the space perfectly without overheating the ceiling of the oven. The secret sauce: PID Control A basic thermostat is just too slow. By the time it realizes the oven is cold, you’ve already lost your window for a perfect bake. Instead, we use a PID controller and a fast-response thermocouple. Basically, the system is constantly watching the gap between where the temperature is and where it needs to be. The second that raw dough starts sucking the heat out of the oven, the controller kicks in and pushes more voltage to those lamps. It happens in real-time. The result? The environment stays steady, and your bread doesn’t know the door was ever opened. A couple of things to watch out for We made these lamps easy to swap out. If one goes, you can drop a new one in quickly and get back to work. No one wants an oven sitting idle during a rush. But here’s the catch: these lamps get incredibly hot. If your oven’s ventilation isn’t up to scratch, that heat just sits there around the sockets. If the housing can’t breathe, your wire insulation will fry way sooner than it should. Make sure there’s plenty of airflow. Get the wiring right, and those annoying “cold spots” you find in old-school electric decks just disappear.
