
Stop Burning the Outside of Your Meat
Anyone who’s run an industrial oven knows the struggle. You’re trying to get a thick cut of meat cooked through, but by the time the center is actually safe to eat, the outside looks like a charcoal briquette. It’s frustrating, and it wastes product. We handle this with short-wave infrared (SWIR) lamps. Instead of just blowing hot air around the surface like a standard convection oven, SWIR actually digs deeper. It goes straight for the water molecules inside the meat, heating it from the inside out. The trick to getting it right The magic is in the wavelength. Because it’s “short-wave,” the energy doesn’t just sit on the surface. It bypasses that outer layer so you don’t get that burnt “skin effect.” But you can’t just blast it on high and walk away. We use PID controllers to keep things under control. Think of it like a dimmer switch that reacts in real-time. It lets you crank up the core temperature without pushing the exterior past the point of a nice sear. The gear you’ll actually need Our SWIR tubes are built for the heavy lifting. We use high-purity quartz because the thermal stress of rapid heating and cooling would crack cheaper glass. When you plug these in, the heat is intense. One heads-up: don’t cheap out on your wiring. These lamps pull a lot of current. If your cables are too thin, you’ll get voltage drops, and your heating will be all over the place. Use heavy-gauge cabling and connectors that can take the heat, or you’ll be replacing burnt-out terminals way too often. A few warnings from the field Here’s the thing: SWIR is fast. Like, really fast. If your sensors are in the wrong spot, you can overshoot your target temperature in a matter of seconds. You have to be obsessive about where your thermocouples are placed. You also need to find the sweet spot between the lamp intensity and how fast your conveyor is moving. Get the timing wrong, and you’ve got dry meat. Get it right, and you get a perfect, uniform cook from the edge all the way to the center.
