
Why Your Pizza Crust is Either Burnt or Raw (and How to Fix It)
Ever notice how in a busy kitchen, you’re always fighting the oven? One minute it’s fine, the next you’ve got a charred crust but the middle is still doughy. The problem is that traditional heating coils are like old freight trains—they take forever to speed up and even longer to stop. Even after your controller tells them to quit, they just keep dumping heat into the oven. It’s too much. You end up overshooting your temperature, and that’s how you ruin a perfectly good pie. Enter infrared lamps. We use shortwave infrared quartz lamps because they don’t bother heating up the air around the pizza. Instead, they shoot energy straight into the dough. The best part? The quartz filament has almost no mass. It hits the right temperature in milliseconds. When you cut the power, it stops almost instantly. It’s fast. Really fast. And that’s the only way to get that perfect brown on the crust without turning your toppings into cardboard. But look, it’s not just “plug and play.” There are a few things you’ve got to get right. First, these lamps are a bit temperamental. They’re fragile. If you bump them or get grease and grime on the quartz tube, they’ll burn out way sooner than they should. You have to treat them with a bit of care. Then there’s the electrical side. You can’t just use any old setup. If your Solid State Relays (SSRs) can’t keep up with the rapid-fire switching these lamps need, you’ll see flickering, or worse, your components will just fry. To really make this work, you need a high-speed PID loop to handle that quick response time. And don’t forget the fans. If you don’t position your cooling fans to protect the sockets, the heat will build up and kill your elements. It takes a little more thought to set up, but the result is a pizza that comes out exactly how you want it, every single time.
